Ingredients for Asparagus and Blue Cheese Quiche:
- 2 bunches asparagus, woody ends trimmed
- 1 ready made mille-feuille-dough or unbaked pie crust
- Melted butter, to grease
- ¼ cup - 0,125l half and half (light) cream
- 5 eggs, well beaten
- 3 oz - 80g soft blue cheese, thinly sliced
- salt and pepper
How to make Asparagus and Blue Cheese Quiche:
Preheat oven to 350°F -175°C
Cut each asparagus spear into thirds. Place in a heatproof bowl and cover with boiling water. Set aside for 2-3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. Pat dry with paper towel.
Roll out mille-feuille-dough and put into buttered form.
Arrange the asparagus and blue cheese over the pastry base.
Whisk eggs and milk in a jug. Season with salt and pepper.
Pour over the pastry base.
Bake in preheat oven at 350°F -175°C for 30 minutes or until center has set.
