Ingredients for Canadian Cheese Soup:

- 4 tomatoes, peeled and diced

- 3 cups - 0,7l chicken stock

- 4 medium potatoes, peeled and diced

- 2 celery ribs, diced

- 1 medium carrot, diced

- 1 small onion, diced

- 6 oz - 170g bacon, trimmed and diced

- 2 tbs olive oil

- 2 tablespoons all-purpose flour

- 1 cup - ¼l milk

- 8 oz - 225g shredded cheddar cheese

- pepper and salt to taste

How to make Canadian Cheese Soup:

In a large saucepan combine the chicken stock, carrots, onion, celery and potatoes and bring to a boil.

Reduce heat, cover and simmer for until vegetables are very tender.

With a potato masher, mash vegetables several times.

Add bacon and continue to simmer.

Meanwhile, melt olive oil in a small saucepan.

Stir in the flour with a wooden spoon and continue stirring for 1 minute.

Using a whisk, gradually stir in the milk. Cook over medium heat, stirring constantly to prevent any lumps, until the sauce is smooth and thickened to the texture of heavy cream, about 3 minutes.

Add vegetable mixture, stirring constantly. Remove from the heat and add cheese.

Stir just until cheese is melted.

Season with salt and pepper.

Ladle the soup and garnish as desired.
