- 3 dl - 1¼ cup cream
- 250 gr - 9 oz dark chocolate
- 3 eggs
- 100 gr - 3½ cups sugar
- Pinch of salt
Separate the yolks of the protein.
Mix the egg yolks with half the the sugar and beat with an electric beater until white.
Beat the egg whites with the remaining sugar hard.
Put the dark chocolate with a dash of cream in a saucepan and melt it over low heat.
Add the beaten egg yolks to it and mix well.
Whip the remaining cream on, well whip it determines the strength of the mousse!
Mix the whipped cream under the chocolate-yolk-sugar mixture.
Please note that from now on you always mix in the same direction with a regular beater, electrical gone now! Use
Mix the beaten egg whites into the mixture with a regular beater.
Again, mix gently and always in the same direction.
