Ingredients for Chilled Corn Soup with Tequila Prawns:


serves 6:


- 3 cups -750ml chicken stock or water with 3 chicken bouillon cubes

- 1 onions, finely chopped

- 10 prawns, peeled, deveined

- 1 can (12 ounce, 425 gr) whole kernel corn

- 2 cloves garlic, minced

- 2 tablespoons olive oil

- ΒΌ cup - 60ml pure cream

- 1 cup - 250ml tequila blanco

- finely grated zest and juice of 1 lime

- Salt and pepper














How to make Chilled Corn Soup with Tequila Prawns:

Saute the onion and garlic in a large pot over medium heat until onions are tender.

Add the water with the chicken bouillon cubes or the chicken stock.

Bring to a boil, add the corn, and simmer for 15 more.

Cool slightly and blend the soup until smooth.

Stir through te he cream and season with salt and pepper.

Place in a frigde for 3 hours until chilled.

Meanwhile, bring a pan of salted water to the boil , add the prawns, then remove immediately from the heat.

Stand for 10 min, then drain.

Place prawns in a boil with lime zest and juice and tequila and season with salt and pepper.

Cool the in the frigde to marinate for 2 hours.

To serve, divide soup among bowls. Drain prawns, then place 2 in each bowl.
