Greek Vegetable Soup


serves 4:

- 2 leeks (finely chopped)

- 4 carrots (finely chopped)

- 1 courgette (chopped)

- 4 tomatoes

- 3 potatoes (chopped)

- 1 onion (chopped)

- 2 red bell peppers

- 6 cups - 1,4l vegetable stock or water with 4 vegetable bouillon cubes

- olive oil

- pepper and salt



Place the tomatoes in a pan with boiling water.

After a couple of minutes remove, peel away the skin, core and roughly chop.

Heat some oil in a large pot over medium-high heat and braise the onions, bell peppers, leeks, potatoes and carrots.

Add the vegetable stock or the water with the vegetable bouillon cubes, bring to the boil, cover the pot and let simmer for 15 min.

Add the tomatoes and the courgette and cook further for approximately 15 min. with the lid on.

Season with salt, pepper and oregano.
