Ingredients for Maple Baked Beans:
for 4 - 6 persons:
- 450 g - 16 ounce dried navy beans, rinced
- 1 pork hock, fresh or smoked
- 6 strips bacon
- 1 onion, chopped
- 1 tsp dried mustard
- ½ cup - 115ml maple syrup
- 2 tbsp brown sugar
- 2 tbsp olive oil
- salt and ground black pepper to taste
Preparation Maple Baked Beans:
In a large pan, cover the beans with water. Bring to a boil and simmer until tender, about 1 hour.
Drain beans and reserve cooking liquid.
Preheat oven to 300°F- 150°C.
In a bowl, combine everything else except the bacon. Stir in the beans.
Season with salt and pepper.
Place 1 bacon strip at the bottom of a large ovenproof dish.
Pour the bean mixture over it, then push the other strip in.
Add just enough reserved cooking liquid to the pot to cover everything.
Cover with lid and place in oven until pork hock is fully cookedand pulling away from the bone. About 3 hours.
If beans begin to look dry, add more reserved cooking liquid.
Once pork hock is cooked, remove beans from oven and remove lid. Mash together butter and brown sugar into a paste, scatter sugar paste over beans and place back in the oven, uncovered, for an additional 30 minutes.
Remove from oven and serve with cold beer and dark bread.
