Ingredients for Mushrooms and Dashima Stock:

- 3-5 shitake mushrooms, dried or fresh

- a few pieces of dashima (sea kelp), about 8 in x 8 in - 20 cm x 20 cm all together

- 3½ oz - 100g  of moo or daikon , peels (optional)

- 4 cups of water

How to make Mushrooms and Dashima Stock:

Wipe the surface of the mushrooms and dashima with a wet paper towel.

If you are using dried shitake mushrooms, you can quickly rinse it under water.

Place the mushrooms, dashima and moo in a souppot and pour the water in.

Bring to a boil. Take out the dashima once the water comes to a boil.

Let the mushrooms and moo simmer until the moo is soft.

You can discard the moo but save the mushrooms.
