- 1,5l (6 cu) water
- 2 vegetable bouillon cubes
- 2 carrots (peeled and chopped)
- 1 leek (sliced)
- 2 large onions (chopped)
- 2 potatoes (peeled and diced)
- A portion of nettles
- Salt and pepper
How to make Nettle Soup:
Nettles, abundant in the spring time, have incredible healing and cleansing properties. Pick the young, fresh leaves on the top and make sure you don't get stung by ensuring you either wear rubber gloves or develop your nettle plucking skills!
Pick the nettles. Rinse the nettles well.
Put the water in the soup bowl and add the onion, leeks, potatoes and carrots to it.
Add the herbs and nettles.
Bring to a boil and let the soup simmer for 20 min.
Mix the soup.
