Ingredients for Potato salad:

  - 2 lbs. - 900g potatoes, peeled and cut into 3/4-inch -2 cm chunks

  - ½ cup - 120g Mayonnaise

  - 2 Tbsp. vinegar

  - salt and ground black pepper to taste

  - 1 tsp. sugar

  - 1 big onion, finely chopped

  - 2 hard-cooked eggs, chopped (optional)

  - parsley

How to make Potato salad:

Cover potatoes with water in heavy saucepan; add salt and bring to a boil.

Reduce heat to low and simmer until potatoes are tender, about 10 minutes.

Drain and cool slightly.

Put the onion in a small pan with 1 tablespoon vinegar and water and bring to a boil.

Reduce heat and simmer for 2-3 minutes.

Cool slightly

Combine  Mayonnaise, vinegar-onion, salt, sugar and pepper in large bowl. Add potatoes and eggs and toss gently.

Garnish with parsley.
