Quiche Primavera

Ingredients for Quiche Primavera:

    serves 4

 - 1 ready-made puff pastry (available in your supermarket)
- 3½oz - 100g bacon
- 5 oz - 140g ricotta
- 2½oz - 70g defrosted peas
- ½ bunch mint
- 1 zucchini, cut into thin slices
- 1 spring onion
- 4 eggs
- 1 cup - 23 cl cream
- pepper and salt

 - 1 tbsp olive oil
- 2 tsp olive oil

How to make Quiche Primavera:

Preheat oven to 350°F -175°C

Heat olive oil in a skillet and fry the bacon until golden.

Drain the bacon on a paper towel.

Roll out puff pastry and put into buttered form.

Combine eggs and cream.

Add the spring onion and mint and season with salt and pepper.

Pour the mixture onto the dough.

Spread the bacon, zucchini slices, peas and ricotta on it.

Bake in preheat oven at 350°F -175°C for 30 minutes or until center has set.

Remove the quiche as soon as possible in the form otherwise the dough week!
