Ingredients for Ratatouille:
- 2 cans 400gr ( 28- to 32oz) chopped tomatoes
- 2 diced eggplants
- 1 diced zucchini squash
- 3 onions chopped
- 1 chopped green bell peper
- 1 chopped red bell pepper
- 2-3 Cloves of Garlic
- 1 tbsp thyme
- 1 teaspoon of chilli powder or chopped fresh chilli (or to taste)
- 1 teaspoon of rosemary
- salt and pepper
- 2 tbsp olive oil
How to make Ratatouille:
Fry the onion in a large hot pan with oil until nearly brown then add chopped garlic.
Cook the onions, stirring occasionally, until they are wilted and lightly caramelized.
Add the eggplant and thyme to the pan and continue to cook, stirring occasionally, until the eggplant is partially cooked, about 5 minutes.
Add the green and red peppers, zucchini, and squash and continue to cook for an additional 5 minutes.
Add the tomatoes, basil, parsley, and salt and pepper, to taste, and cook for a final 5 minutes.
Serve with fluffy basmati rice and chicken.
