Ingredients for Red Cabbage:
- 1 medium sized red cabbage
- 2 lbs- 900g of apples
- 4 tablespoons sugar
- 2 tablespoons cinnamon
- 1 dash of vinegar
- Salt and freshly cracked black pepper
How to make Red Cabbage :
Discard the tough outer leaves of the cabbage, cut into quarters, and remove the hard stalk. Finely shred the rest of the cabbage with a sharp knife.
Add the red cabbage in a large saucepan with a little water and bring to a boil.
Meanwhile peel the apples and cut them into pieces.
Add the apples and let simmer for 1 hour.
Put the sugar, cinnamon and vinegar too.
Season with salt and freshly cracked black pepper.
It is difficult to overcook this! Stir once or twice during cooking.
Can be cooked ahead of time and it freezes very well if there is any left over.
Serve with cooked potatoes and sausages.
