Ingredients for Rosti:

    serves 4

 - 900 gr ( 2lb) waxy potatoes

 - 2 onions

 - 2 eggs

 - 30 gr (1 oz) butter

 - 2 tbsp olive oil

 - salt and  black pepper

Preparation the Rosti:

Parboil the potatoes slices in salted water until just tender, but not soft.

Allow to cool, and chill for at least a couple of hours.

Coarsely grate the potatoes.

Grate the onion.

Beat the eggs in a bowl, then stir in the potatoes and the onions.

Season with Salt and Black Pepper.

Heat the oil in a frying pan over medium high heat.

Add large spoonfuls of the mixture and and press it with a spatula until a thickness of about ½ inch - 1 cm.

Cook for 4 - 5 minutes on each side or until the rosti are golden brown and the potato is tender when pierced with a fork.

Add extra oil to the pan if necessary.

Combination Tip:

Delicious with meatball, bacon and gravy and green beans with onions.
