Ingredients for Spicy Curry Soup:

For 6 Persons:

 -  6½ cups - 1½l chicken broth or water with 3 chicken bouillon cubes

 -  4 gloves minced garlic

 -  1  chopped onions

 -  4 stalks celery, chopped

 -  14 oz - 400g chicken fillets, cut into strips

 -  2 carrots, chopped

 -  1 leek, chopped

 -  4 shiitake or 8 brown mushrooms

 -  1 level tablespoon of turmeric

 -  4 tbsp red curry paste

 -  salt and pepper to taste


How to make  Spicy Curry Soup:

In a large soup pot, heat two tbsp olive oil. Sauté all the vegetables and crushed garlic. Stir-fry for about 5 minutes.

Add chicken broth, or water with the chicken bouillon cubes, 4 tbsp red curry paste, the chicken strips and the turmeric.

Season well with salt and pepper.

Cover with a lid and simmer for 25min.

Cut the mushrooms into slices and add them to the pot for the last 5 minutes of cooking time.
