Ingredients for Veal Stew with Mushrooms:
- 2 pounds veal, cut into pieces
- 4 Tbsp olive oil
- 2 Tbsp flour
- white pepper
- 2 Tbsp chopped fresh parsley, to garnish
- 10 oz - 280g mushrooms
- ½ pound - 225g minced beef/pork
- 2 eggs
- Salt and pepper
How do make Veal Stew with Mushrooms:
Heat up a little oil in a pot and saute the veal cubes till they turn white and get a bit of brownish colour as well.
Work in batches so as not to crowd the beef cubes, or they will steam instead of sauté. Add 1 tablespoon of butter, if necessary.
Sprinkle the veal with the flour, turning the pieces to coat. Cook over low heat for about 4 minutes, turning ones or twice.
Pour in the broth and bring to a boil . Push the veal pieces to one side and scrape the base of the casserole, stirring until well blended.
Use your hands to mix the minced meat and eggs with enough bread crumbs to keep meatballs intact. Season with salt and pepper, and then roll the meat mixture into small balls.
When the meat is half-cooked (approx. in 20 min) add the meat balls.
Season with a pinch of salt and white pepper
Meanwhile, cut the mushrooms into quarters. Melt the butter in a pan and cook the mushrooms until soft.
Add the mushrooms and onions to the veal and cook about 10 minutes more.
Adjust the seasoning!
Sprinkle with parsley and serve.
