Ingredients for Vegetable Soup:
- 2 leeks (finely chopped)
- 3 carrots (finely chopped)
- 1/2 cauliflower (cut into small florets)
- 150 g celery (finely chopped)
- 1 onion (chopped)
- 2 l ( 8½ cups) of water with 4 chicken bouillon cubes or 2 l (8½ cups) chicken stock
- 100 g vermicelli
- pepper and salt
How to make it:
Put the water with the chicken bouilon cubes (or the chicken stock) in a cooking pot and add the washed and cut vegetables.
Bring to the boil and simmer for 15 minutes.
Season with salt and pepper.
Add the vermicelli in your soup. If you're adding too fast, it is overcooked.
