Ingredients for Wild Boar Ragout:
- 800 gr - 1lb12oz boneless wild boar meat (cut for stew)
- 1 bottle red wine
- 2 garlic cloves, peeled and sliced
- 1 tsp black berries jam
- 1 onion, peeled and sliced
- 50 gr - 2 oz raisins
- 2 slice gingerbread
- thyme, laurel,
- 25g/1oz butter, softened
- Salt and pepper
Heat the oil in a large saucepan over high heat. Season the meat with salt and pepper and add to the pan and brown. (That is, cook the meat over high heat, turning frequently, just until it's cooked on the outside.)
Once the meat is browned, add the onions and garlic.
Reduce the heat and cook until the moisture is gone.
Add the red wine and thyme, laurel.
Spread black barry jam over surface of gingerbread and place it on top of the ragout.
Cover and cook for about 1 hours, stirring occasionally. The sauce is done when the meat is fork tender.
Add salt and pepper to taste.
