Beef Stew with French Fries

Beef stew is traditionally served over French fries, but it’s equally as delectable with bread. The meat is so tender and the sauce is so sweet, you’ll come back for seconds… and thirds.
Ingredients for Beef Stew with Fries:
2 large onions
2 pounds - 900g beef (nerve, cut into equal pieces)
salt and pepper
1 bottle of brown beer
2 bay leaves
2 sprigs of thyme
1 cloves
2 slices of bread
2 tablespoons of (sharp) mustard
some parsley stems
How to make Beef Stew with Fries:
Heat a large stew and melt a knob of butter in it.
Stew the onions in a medium heat. Do not brown the onions.
Heat a casserole over medium to medium heat, and melt a knob of butter in it.
Sear the meat pieces in the frying pan until they have a golden brown crust.
Season the meat with some pepper from the grinder and a pinch of salt. Note: It is best to fry a large amount of meat in several turns. When the casserole is completely full of pieces of meat, it may lose too much moisture and "cook" instead of baking.
Put the pieces of meat in the stew with onions. Keep the frying pan with almonds and pour the brown beer in it. Stir all the adherents of the meat while the beer is boiling. (deglaze)Once the beer is boiling, pour the entire contents of the pan into the meat stew. (Never pour cold beer directly into the meat.)
Tie a few leaves of bay leaves, a few sprigs of fresh thyme, and a few parsley stems together with a small amount of kitchen twine. Let the bouquet garni simmer in the pot.
Generously spread a slice of bread with sharp mustard. and put the other one on top.
Place the sandwich in the pot, on top of the meat.Simmer the pot roast over a low heat for one and a half to three hours. The lid does not have to be on the jar. The cooking time depends on the quality of the meat. Stir occasionally in the pot and check in between whether the meat is sufficiently cooked.
Only once the stew meat sauce has the desired thickness, place the lid on the stew.
Taste and season with pepper and salt.
