Cauliflower in white sauce with Sausage and mashed Potatoes

Ingredients for Cauliflower in white sauce with Sausage and mashed Potatoes:
serves 4:
2 lb - 900 g floury potatoes
1 cauliflower
a handful of parsley
a handful of chives
4 sausages
1 oz - 30 g of butter
1½oz - 40g flour
3 cups - 700 ml of milk
pinch of nutmeg
pepper and salt
How to make Cauliflower in white sauce with Sausage and mashed Potatoes:
Peel the potatoes and cut into equal pieces.
Cook in salted water for 20 minutes.
Bring another pot of salted water to the boil and cook the cauliflower florets until al dente in 6-7 minutes.
Melt the butter in a cooking pot over a medium heat. Spoon the flour with the bubbling butter and stir with the whisk.Allow the mixture to "dry" a little while stirring, until you smell a delicious biscuit scent.
Pour the cold milk into the fragrant roux. Continue to stir patiently with a whisk until the sauce simmers and binds into a smooth bechamel sauce.
Melt 1 / 3rd of the butter in a pan and add the flour while stirring until it dries.
Gradually add 135 milliliters of milk per person. Stir into a sauce while stirring. For an even smoother sauce, you can add some scoops of the cauliflower moisture.
Season with nutmeg, pepper and salt.
Stir the cooked cauliflower florets into the sauce.
Finely chop the parsley and chives. Drain the potatoes and crush them.
Add 1/3 of the butter, the rest of the milk, the chopped herbs, pepper, nutmeg and salt. Mix well.
Heat a frying pan with a knob of butter in it. Choose a pan that exactly fits the amount of sausage.
Fry the sausages on one side in the hot butter and then turn them carefully.
Place a lid on the pan, and continue to fry the sausages over a medium heat.
Serve the sausages with the cauliflower in white sauce and the mashed potatoes with herbs.
