Fish Croquettes Recipe

"A home-made fish croquette tastes much better than the ready-made frozen variety."
Ingredients for Fish Croquettes:
- 400 g - 14 oz white fish fillets
- 200 g - 7 oz butter
- 200 g - 7 oz flour
- 100g - 3½ oz breadcrumbs
- 2 eggs, yolks and whites separated
- 150 g - 5 oz grated cheese
- Chives, finely chopped
- Little nutmeg
- 6 dl - 2½ cups fish stock
- 6 dl - 2½ cups milk
- Salt and pepper
How to make Fish Croquettes:
Cook the fish in 3 cups water and add a fish stock cube. .
When the fish is ready, remove it and set aside.
Then make the roux , melt the butter and add the flour .
Mix well with a whisk over a low heat .
Add the hot fish stock little by little while stirring and bring to the boil keep stirring.
You probably don't need the whole fish broth, make sure the roux is thick enough.
Season with nutmeg
Let it boil for at least 1 minute .
Cut the fillet into small pieces and mix it under the stock.
Put the mixture into an oiled bowl and make sure it is about 1 cm thick.
Keep this one in the refrigerator overnight .
Remove from the refrigerator , turn it on a flour -covered cutting board and cut croquettes out .
Beat the egg white in a separate plate , put the breadcrumbs in another plate and pull the fish croquettes first by the egg white , see that everywhere egg white depends , and then the breadcrumbs.
Fry the croquettes in a fryer at 356°F- 180 ° C until they see well browned .
Serve with a salad .
