Lobster Tartare with Nuts, Sesame and Soy Sauce

Ingredients for Lobster Tartare with Nuts, Sesame and Soy Sauce
serves 4:
1 live lobster (preferred)
1 tablespoon of sesame seeds
1 tablespoon of soy sauce
3½ oz. - 100 g nut mixture
How to make Lobster Tartare with Nuts, Sesame and Soy Sauce:
Cook the lobster very briefly (2 min.) In boiling water. The meat should be semi-raw: the outside may be white, but still slightly glassy on the inside.
Let it cool down for a while.
Keep the head and legs aside (to make bisque or fond with it later) and remove the meat from the tail and scissors.
Cut this meat into bite-sized pieces with a sharp knife.
Meanwhile, toast the sesame seeds gently in a dry pan.
Mix the sesame oil, the soy sauce, the nut mixture and the roasted sesame seeds under the lobster meat and season with salt and pepper.
Put in the refrigerator until just before serving.
