Sweet Potatoes with Spinach Recipe

Ingredients for Sweet Potato With Spinach:
serves 4
- 2 lbs - 900g sweet potatoes
- 2 tablespoons butter
- 1 garlic clove, minced
- 7 oz - 200g baby spinach leaves
- ¼ cup - 60 ml sour cream
- salt and pepper to taste
Optional: Shredded Mozzarella cheese
How to make Sweet Potato with Spinach:
Place the potatoes into a large pot, and cover with salted water.
Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, about 20 minutes.
Smash the cooked potatoes with a potato masher.
Add the sour cream, salt and pepper and stir to combine.
Taste and adjust seasonings. Set aside.
Add a theespoon olive oil in a large skillet, over medium hea and add the minced garlic. When the garlic is fragrant, after about a minute, add the spinach. Toss with tongs to coat the leaves thoroughly and continue tossing as the spinach cooks.
Once the spinach has wilted, add it to the potato mixture.
Stir well to combine.
